soup

April 24, 2017

Getting back to reading Simple Abundance by Sarah Ban Breathnach. In her entry for today, she talks of tastes, specifically culinary tastes. She advises us to  seek out unusual, perhaps ethnic, grocery stores and to clean out our spice cabinets. I can admit that I tend to let spice jars hang out forever on my spice racks. While they do last quite a while, they do also have a shelf life at some point. I recently did a very quick, rough calculation and estimated that the spices in our household would total $300 more or less. That is a lot of money tied up in spices. We enjoy cooking and I’ve recently discovered a new soup recipe that will go on my regular rotation now.

My goodness - that's a whole lot of spices!

One of my goals for 2017 is to cook more frequently, trying new recipes whenever possible. I’ve found a variety of new dishes that I enjoy and have added them to my rotation. Most of them have tended to be soups, for some reason. Soups are easy, light or filling, long-lasting, adaptable. Do you know the chain restaurant Carrabba’s? I love their minestrone soup and can make a meal out of just that with some bread. I tried a new minestrone soup recipe this weekend from the book Foods That Cause You to Lose Weight by Neal Barnard, M.D. Oh my goodness, it is so good and rivals my restaurant fave.

Delicious minestrone soup!

Do you have a favorite soup?

Sarah ends her entry with a quote from nineteenth-century frontiersman Kit Carson, whose dying words supposedly were: “Wish I had time for one more bowl of chili.” Will I be thinking of soup on my deathbed? Hmm…maybe. Who knows?

I don’t cook soups from scratch very often. So, I think my favorite is Fatz’s Loaded Baked Potato soup. I know it is because it is probably full of sodium that it tastes so good, but, hey, I only have it every once in a while.

That sounds yummy! I am not familiar with Fatz’s, just googled it – their food looks so good! I grew up in Louisville, KY, so I know a bit about southern food and cooking. Wish we’d had that chain! I am with you on the salt…I don’t go overboard, but sometimes a salty dish is just the thing.

All commercial food is loaded in sodium. My dad had to limit his sodium intake after open heart surgery, so I started looking up the menus for chain resturants. Oh My Gosh! I was shocked to see how much sodium is in most items. Things I had been eating because they were low in calories had over 1500 mg of sodium. It’s crazy, but can be oh so good. LOL

I'd Love to Hear from You!
