…in the time it took to chop, heat, blend and heat a bit more. Homemade tomato soup! The recipe also called for an onion, seasonings, and cornstarch for thickening. I added in some fresh dill from the herb garden. I tried a new-to-me tomato soup recipe this time from the book, The Multiple Sclerosis Diet Book: A Low-Fat Diet for the Treatment of M.S., by Roy Swank, M.D., which I recently re-purchased.
I had this book many years ago, like 20 years ago, and couldn’t bring myself to adhere to the strict principles (no red meat, no dairy, etc). That was a long time ago and since then, I have given up red meat (many years back now) and dairy (a few years ago) for compassion reasons. So, I thought I would give the Swank diet, as it is called, another try. There is no cure for MS and for those with relapsing-remitting type like myself, diet can play a huge part in keep the relapses at bay. I am strengthening my resolve to stick with this.
Back to the soup, it was pretty good. Personally I thought there was way too much sugar. The recipe called for 2 tablespoons. Too sweet for a soup. The man really likes it, though. I have another tomato soup recipe that I really love and will use that one with the next batch of tomatoes from the garden. Do you have a favorite tomato soup recipe?
