black bean & corn salsa

We continue to gear up for our summer cookout and I am thumbing through my multitude of cookbooks and doing online searches for some great dishes to make. We do our cookouts potluck style, which means there will be a great variety and quantity of food from not only ourselves but also our guests. This gives me a lot of room for trying new dishes – if something fails, it’s no big deal. There’s plenty of other food available. This year I will add a couple of new recipes to the cookout menu and my good old standby will also be served. It is a black bean and corn salsa.

I’ve made it for years and it always goes over well. It’s perfect to take to picnics and summer gatherings. I found it at allrecipes.com. I’ve seen many variations of it online and with a couple of simple modifications I’ve settled on this, if you are interested in trying it:

Ingredients:

  • 4 (15 ounce) cans black beans, rinsed and drained
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 (16 ounce) package frozen corn, thawed
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon minced garlic
  • 1/4 teaspoon hot sauce, or to taste

Directions (so simple!):

  • Stir all ingredients together in a non-reactive container. I use a big plastic bowl. Cover the bowl and chill in refrigerator overnight. You can transfer it to an attractive dish for serving.

Another great thing about this salsa is that it allows me to use veggies from my own garden. I have some bell peppers that are ready and maybe there will be a tomato or two.
